Winegrower since 1982, Pascal Doquet ran the family house from 1995 to 2003 placing more and more emphasis on organic practices along the way. He stopped herbicides used by his father completely to work the soil with plowing and cover plants in 2001. He created his own line of champagnes in 2004.
His cellar is in Vertus. 60% of his 8.69 hectare estate lies in the south of the "Côte des Blancs" and 40% in the chalk hills of "Côtes du Perthois".
Each terroir is transformed into wine separately, allowing for the creation of no less than three different non-vintage Blanc de Blancs. Rosé that is pure “Côte des Blancs,” is blended with Pinot Noir from Vertus and Bergères-les-Vertus.
The "Cœur de Terroirs" vintage champagnes beautifully illustrate the attributes of each individual village : Vertus and Le Mont Aimé for Premiers Crus, Le Mesnil-sur-Oger for Grand Cru.
The most natural methods possible are employed in the winemaking process. Only indigenous yeasts are used, including, since 2016, for the “prise de mousse” (second fermentation.) Approximately 50% of the wines are raised in wood.
