Winegrower since 1982, Pascal Doquet ran the family house from 1995 to 2003 placing more and more emphasis on organic practices along the way. He adopted organics completely for the soil work starting in 2001 and created his own line of champagnes in 2004.
In Vertus, 60% of his 8.66 hectare estate lies in the Côte des Blancs and 40% in the chalk hills of Perthois.
Each terroir is transformed into wine separately, allowing for the creation of no less than three different non-vintage Blanc de Blancs. Rosé that is pure “Côte des Blancs,” is blended with Pinot Noir from Vertus and Bergères-les-Vertus. The vintage champagnes beautifully illustrate the attributes of each individual village: Vertus and Le Mont Aimé for Premiers Crus, Le Mesnil-sur-Oger for Grand Crus.
The most natural methods possible are employed in the winemaking process. Only indigenous yeasts are used, including, since 2016, for the “prise de mousse” (second fermentation.) Approximately one third of the wines are raised in wood.
